Devils Food Cake recipe

 sorry it's not in metric!

you need

bundt pan or any cake pan you like
electric mixer

1 1/2 c sugar or Splenda
1/2 c brown sugar
1 3/4 c Swan's Down (or other) cake flour
3/4 c cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 eggs
1 c milk
1/2 c butter or margarine
2 tsp vanilla extract
1 c semi-sweet chocolate chips
1 c boiling water

*heat oven to 350 degrees
*grease bundt pan & set aside
* combine dry ingredients (flour, cocoa, salt, sugar, baking powder & soda) in mixer, mix on low setting to distribute evenly
*in separate bowl combine wet ingredients (eggs, vanilla, milk) and set aside. Leave butter/margarine and boiling water until called for.
*gradually mix in wet ingredients to dry. Keep mixer on low setting.
*in a shallow pot, over *very* low heat, melt chocolate chips and margarine together, whisking continually. When throroughly melted, add to batter mixture. Keeping on low setting, mix for 2-3 minutes, scrape sides, mix again.
*add boiling water to batter, mix thoroughly. Batter will be really really thin but don't worry about that.
*pour into greased cake pans, bake 30-45 minutes, or until a wooden pick inserted into the center comes out clean.
* Let cake cool at least 2 hours before frosting. Cake should be cool to the touch before frosting to avoid pulling up crumbs. Frost with long, even strokes, rotating plate as you go around.


12 oz cream cheese at room temperature
8 oz sour cream
1 c semi-sweet chocolate chips
1/4 c butter or margarine
1/4 amaretto or liquour of your choice
1/4 c sugar or Splenda
1/4 c cocoa powder

*in electric mixer, combine cream cheese, sour cream, sugar, cocoa.
*melt together chocolate chips, butter/margarrine & liquor, whisking continually until smooth.
*add chocolate to dairy mixture, mix until smooth, scraping sides as you go.
*let chill at least 2 hours before frosting cake.
